Chicken is very popular as a dish throughout Italy and you will see it on the menu as Pollo. Chicken is cooked in a variety of ways, and often with herbs such as rosemary. Lemons and chicken will also find itself on the Italian menu, along with fennel and polenta depending on where you are in the country.

Italian Chicken Recipes: Chicken with Red Peppers

This easy Italian chicken recipe comes from Southern Italy.

3 lb (1.5 kg) chicken
3 large peppers, red, green, yellow
6 tablespoons olive oil
2 medium red onions, chopped finely
2 cloves garlic, chopped finely
1/2 cup black olives
small piece of dry chili crumbled, (optional)
100 ml (1/2  Cup) white wine
2 tomatoes, skinned and chopped
3 tablespoons parsley, chopped finely
salt and pepper to taste

Chicken with peppers and olives. Trim fat off chicken and remove skin. Chop peppers into strips lengthways.

Heat 3 tablespoons oil in pot and fry the onions over a low heat until soft.

 Remove from pot and place in a small bowl.

Add the remaining oil, raise heat slightly and fry chicken until brown. Return onions to pot and add the garlic, black olives and chili if using.

Pour in the wine and cook until liquid has been reduced by half. Add the peppers. Season to taste. After 3 minutes stir in the tomatoes. Lower the heat, cover the pot and cook until peppers are soft and chicken has been cooked well. (about 20-30 minutes). Stir in parsley and serve.
 

Italian Chicken Recipes: Chicken with Parma Ham and Cheese

The Italian name for this Italian recipe is Pollo alla Valdostana. In Italy you can see other meats with similar names. You can get Scallope di Vitello Caldostana (Escalope of Veal Valdostana) , for example. This is because the Valdostana (Val d' Aosta) is home of the Fontina cheese that is used in this chicken recipe.

2 slices procuitto
4 slices Fontina cheese
4 Maryland chicken pieces (leg and thigh together)
12 basil leaves
2 tablespoons olive oil
1 tablespoon butter
1/2 cup white wine
salt and pepper to taste

Chicken with prosciutto and Fontina cheese. Preheat the oven to 200 C/ 400 F/ Gas 6
Lightly oil a deep baking dish. Cut the prociutto and Fontina slices in half crossways.

Skin the chicken thigh section, and make a pocket in the center of each thigh. Fill the pocket with half the prosciutto and 4 basil leaves.

Heat the oil and butter in a pot until foaming. Add chicken pieces and cook for 2 minutes over a medium heat. Transfer to the baking dish.

Add the wine to the pot and deglaze.  Stir well and then pour over chicken and season to taste.

Top each chicken piece with a slice of prosciuto and cover with a slice of Fontina cheese. Bake in oven for 20 minutes or until chicken is cooked and tender.
